There is no universal taste of black tea. Anyone who has fallen for these strong and aromatic beverages will testify that they offer unexpected experiences. They will transport you to the monsoon hills of Sri Lanka, where it smells of spices. They will take you to the plantations of the iconic Darjeeling, where the colourful saris of young Indian women flash through the flood of green. You will be invited to traditional China, where the production of premium black tea is extraordinarily sophisticated.
What those strange abbreviations mean
All teas are classified for clarity (not just the black tea). Adherence to the established classification indeed makes it difficult for some growers. Whole-leaf tea - contains whole leaves, rarely broken.
Whole-leaf teas are made in an orthodox way, retaining maximum aromatic compounds. They must be steeped longer to release the aroma.
- OP (Orange Pekoe)... thin, long, pointed leaves with petioles and tips
- P (Pekoe)... pointed leaves, larger than OP, medium grade
- FOP (Flowery Orange Pekoe)... stems with undeveloped buds
- GFOP (Golden Flowery Orange Pekoe)... Darjeeling containing young leaves
- TGFOP (Tippy Golden Flowery Orange Pekoe)... excellent quality Darjeeling, high percentage of tips
- FTGFOP (Finest Tippy Golden Flowery Pekoe)... the most expensive and best quality whole leaf tea, high percentage of tips and shoots Broken (broken tea) - these are crushed leaves. The tea is normally marked with the letter B. The infusion is finished faster, it is usually hearty.
- FBOP (Flowery Broken Orange Pekoe)... Ceylonese or Indian tea, very aromatic
- BOP (Broken Orange Pekoe)... semi-leaf, regular tea, strong flavour
- BT (Broken Tea)... shorter leaves than
- BOP Fannings (pulp) - broken tea that has fallen through a fine sieve. Used in funnel bags. The flavour and aroma are released quickly after pouring water over it.
- BOFP (Broken Orange Pekoe Fannings), OF (Orange Fannings)... tea with a fine texture
- PF (Pekoe Fannings)... smaller leaves than
- BOFP Dust (dust) - powder from the sieving of orthodox teas. It is used to make pressed teas.
- PD (Pekoe Dust), D (Dust)... the finest tea
