Origins
Darjeeling is called "the champagne of India" for a reason. This black tea variety is so distinctive that any slightly experienced tea drinker will recognize it. The tea plants are grown in the foothills of the Himalayas, where they thrive in indeal conditions. The Camellia sinensis plants, an Assamica species, are cared for by small family farms where the secret of the original black tea is passed down from generation to generation.
Darjeeling TGFOP1 "Silverhill" is harvested in the second week of March. Its leaves are full of valuable nutrients and carry a mild, pleasant flavor. Picking and transport are in the hands of local women. With nimble fingers, they pinch off the youngest shoots and place them in baskets which they carry on their backs. After they're moved to the processing farm, the leaves are spread into a thin layer. When they wither naturally, the fermentation process begins. The enzymes are oxidized, and the flavor and strength of the tea intensify. The following step also significantly influences the result. Hot air drying can ruin everything. Therefore the plantation's general manager keeps an eye on the temperature in the drying room and watches green leaves turn almost black.
The capital letters in the name of Darjeeling TGFOP1 "Silverhill" suggest that this black tea has a high amount of tips, a delicate aromatic flavor and is one of the highly prized types of tea.
