Origins
China's Yunnan province has been associated with tea gardens since the ancient times. It was famous for its green tea, but recently it expanded to the production of black tea. While it irks some of the locals, there is a great demand for premium black tea from China on the international market. It is of the highest quality. In Yunnan, the tradition of growing tea bushes is said to be more than two thousand years old. The oldest living tea tree in Yunnan is 800 years old!
Black tea production begins at harvest – for Yunnan Black Premium, the young buds and the next few leaves are plucked. Once they have wilted, they are rolled and they release the juice from their cells. This allows the tea to ferment. The enzyme oxidation process is carefully monitored – the plantation manager watches over the fermentation time, the temperature of the tea and the humidity. When he deems the fermentation to be complete, the tea leaves are dried.

Instructions for preparation
Pour 150-200ml of boiled water (100°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 3-5 minutes, then remove the strainer.
