Origins
This second harvest tea has beautiful long leaves with golden tips that lend its infusion high-quality and exquisite delicacy. Assam FTGOP 1 'Mokalbari' is grown in the Dibrugarh district of Assam in the northeastern region of India. Mokalbari is one of India's finest tea gardens. The garden's name has hidden origin in it – Mokal means tall bamboo, and Bari refers to the garden. In the second half of the 19th century, the British colonizers found the soil around the Brahmaputra River extremely rich. Experienced planters identified the area around Mokalbari as suitable for a tea garden, cleared the local bamboo groves and planted the first tea trees. Since 1876, the Mokalbari Tea Estate Garden has been producing exquisite tea with a strong infusion and smooth, malt-like flavor.
The processing of Chinese tea leaves (Camellia sinensis) is similar to other parts of Assam. After harvesting, they wilt and ferment. They are spread into thin layers and left to the natural process of enzyme oxidation at controlled humidity and temperature (usually around 28°C). This process brings out the flavor and aroma of the tea. That is how the green tea turns into black tea. Subsequent hot air drying completes the process. The last step of the production process must be carefully monitored, as too high a temperature can spoil the entire crop.

Instructions for preparation
Pour 150-200ml of boiling water (100°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 3-5 minutes, then remove the strainer.
