Summer Day – Honeybush
If we're mincing words, honeybush has nothing to do with tea. Yet its popularity on the tea market is growing and even the most orthodox tea snobs are joining in. The reason is simple: Honeybush has a fabulous taste and aroma, is caffeine-free and has the ability to support your immune system. In the company of papaya, calendula and roses, it guarantees a wonderful culinary experience.

Summer Day is based on the unfermented version of honeybush, so the infusion has a golden yellow, opalescent color. The aroma is very delicious, fruity and full. In the taste we recognize the typical honeyiness with a pleasant hint of mango and papaya. Drinks containing honeybush are a perfect fit for preparing ice tea. We recommend filling a glass up to 2/3 with ice cubes and pouring the warm beverage over them. The result will surprise you with its excellent taste and refreshing qualities.
Origins
Unlike green, black or white tea, honeybush is not prepared from the leaves of the Chinese tea tree (Camellia sinensis), but from a wild growing shrub with the botanical name of Cyclopia intermedia. It is a roughly 150cm tall plant from the bean family, which places it into the same category as rooibos. Honeybush grows in the high mountains of the Eastern Cape. It requires very special soil conditions and a humid climate. Thanks to the fact that it’s extremely sensitive to chemicals, it doesn’t do well on man-made plantations. On the other hand, its wild origin guarantees 100% organic quality. Honeybush is harvested once it's bloomed with its fragrant, honey-scented yellow flowers. The harvesting is very difficult, as the bushes are quite difficult to access in the mountains. Harvesters, usually equipped with sickles, cut the bushes just above the ground, fill large baskets with branches and lower them into the valley. Depending on whether the result is to be green (unfermented) or mahogany-brown (fermented) honeybush, the farmers choose the processing procedure. In both cases, however, they first chop the twigs into smaller pieces in cutting machines. If they want green honeybush, they dry the plants parts in the sun, usually for 1-2 days. The final product is passed through a 6.5mm mesh sieve, which eliminates any pieces thicker than a match.
The fine green honeybush is transferred into netted bags and goes to the market. Other ingredients we used to prepare Summer Day come from certified EU suppliers. This guarantees that they have been grown according to organic farming principles and contain no health hazards.
We have chosen the natural aroma with the same care. Its purpose is to balance the taste and aroma of the infusion and to preserve them for as long as possible. Unlike synthetic flavors, it does not cause heartburn, stomach irritation or food allergies.

Herb packaging preview
We pack our herbs in a strong, zip-lock aluminum packet which allows you to easily re-seal its contents. Thanks to the hermetic seal, the herbs are protected against humidity, light and foreign odors, all of which could noticeably affect the quality of the brew and the herb itself.

Instructions for preparation
Pour 150-200ml of boiled water (100°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 3-5 minutes, then remove the strainer.
