Chai of Madagascar – Green Honeybush
We were a little sad that today, Southeast Africa is separated from Madagascar by 400km of water. 160 million years ago, they were one continent, and so we put them back together. At least in tea form. We've combined African honeybush with Madagascan oranges, pepper and vanilla.

The base ingredients for Chai of Madagascar are green rooibos and green honeybush. This corresponds to the color, flavor and aroma of the infusion. When brewed, the tea is a light orange color with beautiful highlights. The aroma is very full and distinctively fruity. The flavor reflects the honey par of honeybush and the sweetness of rooibos as well as the varied palette of exotic ingredients. You'l taste the flavor of orange vanilla blossoms on the palate, which is complemented by a pleasant pungency of pink pepper, ginger and cloves. This tea is also perfect iced.

Origins
Honeybush is closely related to rooibos. They look quite similar, grow in similar places and taste similarly exquisite. Honeybush is admittedly a bit more sweet and requires different soil and water conditions, but both are members of the legume family and both are popular for their excellent health benefits and wild habitat. Because of this, they do not contain any industrial chemicals.
Honeybush is harvested from a shrub called Cyclopia intermedia. It is an approximately 150cm tall plant with long twigs and needle-like leaves. It grows only in the Southern and Eastern Cape region of South Africa, in hard-to-reach hills. Only the young plants are harvested during their flowering season. Whole twigs and leaves are chopped into smaller pieces and, in the case of green honeybush, dried immediately in the sun. The final product is sieved in a special drum to separate the long and thick pieces. Rooibos comes from the Cape tea tree (Asplathus linearis), which can only be found in the Cederberg Mountains, about 250km from Cape Town. Tea plants also grow wild and although many people have tried, they have not yet succeeded in growing them on plantations. They are harvested in the early autumn by trimming the whole branches. Like honeybush, they are finely chopped in processing farms. The green rooibos is then dried, sorted and exported. All other ingredients are purchased from verified suppliers in the EU. Their fruit is processed by freeze-drying. The great advantage of this technology is the preservation of all of its sensory properties and the maximum of valuable vitamins. Extra care has been taken in the selection, production, storage and transport of the raw materials, which come from organic farming. Chai of Madagascar thus achieves the highest quality.

Instructions for preparation
Pour 150-200ml of boiled water (100°C) per 1 teaspoon of honeybush.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 3-5 minutes, then remove the strainer.
