Brew & Taste

Lemon balm infusion has a light yellow-green color and a very pleasant, herbal-lemony taste and aroma. It is excellent on hot days as an ice tea, but also when you need to warm up your body. You can sweeten it with honey or corn sugar.

Origins

Melissa officinalis is a popular herb from the Lamiaceae family. You can see this perennial growing 70-150cm tall in fields and sunny gardens. It's native to the eastern Mediterranean and Asia Minor, as well as central Europe.

Melissa's leaves and flowers are collected in June and July, before the herb flowers and often around midday on cooler days. This rule is not based on superstitions or legends, but on centuries of experience of herbalists –⁠⁠⁠⁠⁠⁠ this is when it contains the maximum amount of essential oils such as citral, citronellan and geraniol. Lemon balm should be dried slowly and kept in well-sealed containers.

But still, like with most herbs, there are a few legends attached to lemon balm. Supposedly, prince Llevellyn of Glaramorgan drank lemon balm tea every day and lived to be 108 years. The ancient Greeks, who gave the plant the name Melissa (Greek for bee), believed that a sprig of lemon balm would attract new bees to an empty hive. Others believed it would bring love to women when placed in an amulet.

Lemon balm tea is suitable for anyone and you can enjoy it all day long.

Instructions for preparation

  1. Pour 500ml of boiled water (100°C) per 2 teaspoon of tea.
  2. When brewing in a teapot add 1 extra teaspoon.
  3. Covered, let steep for 10 minutes, then remove the strainer.
  4. Optionally, add honey or lemon.
