Origins
Japan's southernmost island of Kyushu is famous for its massive active volcano, Aso. Thanks to it, there is no shortage of tectonic activity, hot springs and mineral-rich soil in this part of the Land of the Rising Sun. The latter in particular is the reason for why there is a flood of the most famous tea plantations, whose speciality is green tea.
One of them is the one in Kagoshima Prefecture. It produces a very unique tea called Takumi. This gyokuro is entirely dependent on the skill of its makers. It is grown organically, without a touch of added chemistry. However, this can often be a stumbling block, as gyokuro is one of the so-called shaded teas. Pests thrive in shade, so the trees have to be protected with experience cultivated by generations of tea growers armored with patience.
The tea plants need to be shades for a minimum of 18, but most often up to 30 days. This always happens in the spring, so that the first buds can be harvested immediately afterwards, together with the 2 deep green leaves that hide a taste and aroma of unprecedented intensity. As well as the harvesting, the subsequent rolling into thin needles is done entirely by hand, so that only the highest quality is carefully monitored at all times.
Carefulness and dedication to the craft is rewarded with the highest price at the end of the process. Instructions for preparation
First infusion:
Pour 100ml of boiled water (60°C) per 3g of tea.
Covered, steep for 2 minues, then remove the strainer.
Second infusion:
Pour required amount of boiled water (70°C) over tea leaves.
Steep for 1.5 minutes.
Third infusion:
Pour required amount of boiled water (80°C) over tea leaves.
Steep for 1 minute.
