Benefits of Safflower
The petals of the safflower (Carthamus tinctorius) have become famous several times. Firstly, people have used them to dye fabrics, and secondly, to colour food. But because they contain several valuable compounds, they have also become popular as a base for teas and decoctions.
Safflower is a roughly one-metre-tall annual from the star family. It resembles the thistle in appearance, but its beautiful yellow-orange flowers distinguish it at first sight. The safflower is native to Asia. However, it is also grown in Europe, for instance. It does not demand nutrients and does not tolerate waterlogging. Its very long roots reach up to 2.5 metres deep.
The petals are particularly rich in safflower yellow and carthamine, pigments used in cooking and, more recently, in the cosmetics industry.
