It was immediately clear to us that the earthy base of the Oolong balanced it out beautifully.
Whether it succeeded, you will easily find out for yourselves. Taiwan's finest semi-fermented tea flavoured with goodies from the cake shop has found its way to many tea drinkers. We are sure you will enjoy them too. Do not be afraid of repeated infusing, second to third tends to be best.
Prepare semi-fermented tea similar to green tea. Pour water at 85-95 ⁰C over it, at a ratio of 1 teaspoon per 150-200 millilitres of water.
Oolongs give up to 5 infusions. Try all their flavour nuances, shades and colours. Enjoy each infusion, and you will certainly notice how the tea changes as the number increases. The second and third infusions are usually the tastiest.
Oolongs are great for the Gong Fu Cha ritual. You do not have to have a tea collection, a sniffing cup or bamboo tweezers at home. You can enjoy the traditional Chinese ceremony with commonly available kitchen utensils. You can find out how to do it here.
