Origins
When you say black tea, most people think of Sri Lanka (also known as Ceylon). Today, it is no longer relevant that the cultivation of tea trees there was undertaken out of necessity. After a fungus epidemic hit the local coffee plantations in 1869. What is important is that Sri Lanka supplies the world with tea of exceptional quality, which is popular even at the English royal court. Earl Grey is a classic that will not disappoint you. This tea is sure to find its way on your breakfast table. In this case, we offer Earl Grey in organic quality. The tea plants from whose leaves it is made are grown under an organic farming regime, without the use of industrial fertilizers and chemicals. This farming method requires a deep knowledge of nature and is not always a guarantee of high production. However, we can rely on the exceptional purity of the tea leaves and the high content of valuable substances.
Black teas are produced by fermentation. Green, fresh leaves need to be left to wilt. Their structure must be disrupted to release the juices that trigger the fermentation (oxidation) process. Some black teas are left to ferment for minutes, others for up to 2 hours. Only a very experienced worker can spot when the process is complete. Once that moment arrives, the leaves (now dark in color) go into the drying rooms. Before that they are sprayed with bergamot oil – the essential oil from the fruit of a citrus tree that looks like a yellow pears but tastes sour and smells very strong of citruses. Bergamot essential oil is used extensively in men's perfumes, among other things, and has many health benefits.

Instructions for preparation
Pour 150-200ml of boiled water (100°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 2-3 minutes, then remove the strainer.
