Origins
Only about 87 tea gardens in the world have the right to produce tea with the Darjeeling logo and name. The Tukdah tea garden, located in eastern India, a verdant region in the eastern Himalayas, is among them. It has fresh air, numerous waterfalls and endless greenery, above which rises the permanently snow-capped Kanchenjunga, the third-highest Himalayan mountain. Such conditions are found nowhere else on earth, which is why the tea that grows in Tukdah is so unique.
The second harvest usually takes place from mid-May to early June. It is usually the local women and girls who go to the plantation and climb the hillsides with large baskets to harvest ''green gold'' before the dew falls. If dew was allowed to fall, the leaves would dampen and speed up the oxidation of the enzymes, which is undesirable in tea production. After harvesting, the leaves are left to wilt, then rolled sometimes by machine, but mostly by hand, and left to ferment.
Darjeeling can be fermented to a maximum of 90%, so this process is carefully supervized. The final drying process is monitored in the same way.
The abbreviation FTGFOP (Fine Tippy Golden Flowery Orange Pekoe) suggests that it is a highly prized variety from a high mountain plantation, and its production has been given the utmost attention.

Instructions for preparation
Pour 150-200ml of boiled water (100°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 2-3 minutes, then remove the strainer.
