Who would have thought to look at burdock as tasty food? The Japanese, for example, not only see it as a food but also as a delicacy. In the Middle Ages, for example, burdock root was considered a regular vegetable. And thanks to its low calorific value and surprisingly good taste, it is regaining its popularity in the modern times, too.

Burdock is a biennial plant with a root growing up to 1m long. At first glance, however, it's the huge leaves, which can be up to 50cm in diameter, that catch the eye of most hikers. It grows all over Europe and Asia, including the otherwise inhospitable Siberian region. It prefers humus-rich soil, so you'll find it in thickets and forests.

Arctium lappa, as the herb's Latin name goes, is really popular, especially in China and the aforementioned Japan. There, burdock root is pickled in apple cider vinegar, fried as chips or simply eaten raw. In Europe, this culinary use passes us by, but a decoction of burdock root is loved by people across continents.

The infusion is not recommended for pregnant women and people with hyperglycemia. In other cases, consumption in normal doses is fine, but as with all herbs, we advise taking a short break in use after about 8 weeks.

Preparation

Temperature 100 °C Preparation time 15 minutes Amount 2 teaspoons for 250 ml

Instructions for preparation

Pour 250ml of boiled water (100°C) per 2 teaspoons of tea.
When brewing in a teapot add 1-2 extra teaspoons.
Covered, let steep for 15 minutes, then remove the strainer.
