Brew & Taste

Assam from Doomur Dullung gives a dark coppery infusion. The aroma is balanced and sweet. Likewise, its taste is harmonious, slightly malty and full. The careful taster will also find slight smooth, milk undertones. The tea is suitable for all-day drinking and is perfect for a morning pick-me-up.

Origins

The Doomur Dullung Tea Garden is owned by the oldest tea company in the world. It even has a charter from Queen Victoria from 1845. The 640 hectare plantation produces 1.1 million kilograms of Assam's finest tea annually.

The harvesting of Chinese tea trees (Camellia sinensis) takes place early in the morning. The tea leaves and buds are plucked by hand and transported in large baskets to the factories. Then they release the cell juice, which starts the oxidation of the enzymes.

It must take place in warm and humid conditions, and it must be strictly monitored. During fermentation, the green leaves turn dark brown, acquiring their typical taste and aroma. Drying is carried out under strict control. A higher temperature would destroy the tea completely.

Preparation

Temperature 100 °C Preparation time 2-3 minutes Amount 1 teaspoon for 150-200 ml

Instructions for preparation

Pour 150-200ml of boiled water (100°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 2-3 minutes, then remove the strainer.
