Origins
The South American herb called Paraguayan holly (Ilex paraguariensis) is popular among lovers of invigorating and refreshing drinks. The leaves and twigs of this evergreen tree, which is mainly found in Brazil, Argentina, Paraguay and Uruguay, have been used to make a popular 'tea' since the ancient times. It was the local tribes who discovered the unique properties of yerba mate and passed on their knowledge to the Jesuit missionaries. From them, the drink's fame spread to almost all over the world.
The Paraguayan yerba mate grows at altitudes of around 500-700m, usually in shady and humid environments around rivers and streams. They have stiff, ovate leaves with a serrated edge. For harvesting, the entire branches and leaves are cut back every 3-4 years. Workers stuff them into sacks and leave them to ferment. When fermentation reaches the necessary stage, it must be stopped by briefly heating the whole harvest. Finally, the yerba mate must be dried, coarsely ground and placed back into the sacks. It is then left to mature for 12-24 months. Only at the very end is it ground into a finer consistency, sorted and packaged.
We have added papaya, among other ingredients. The reason is simple: it tastes great and contains valuable vitamins and minerals. This tropical plant (Carica papaya) is famous for its large, sweet fruit. These berries weigh between 0.5-10kg and have juicy orange to red flesh under the skin. In the center of the fruit are small seeds in a transparent, jelly-like coat. Papayas contain the enzyme papain, which promotes digestion and helps the body to manage inflammation. The plant is most commonly found in Central America.
By combining Yerba Mate, papaya, pineapple and other ingredients, we have created a vitamin and energy bomb that can be enjoyed both hot and iced. It will quench your summer thirst and warm you up during winter fun.
