Origins
If you are offered a "Chinese mushroom" in a restaurant, you probably won't be sure what to look forward to. Even the Latin name Lentinula edodes probably won't give you a clear idea. But when you hear shiitake, you may already be salivating. Currently the world's most popular mushroom, which shares the top spot with portobello mushrooms, it is a real delicacy and oriental gastronomy would be a lot less flavorfull without it.
Shiitake is naturally found in Southeast Asia, where it prefers a warmer and more humid climate. It's a fungus ofthen found on shii trees (hence its Japanese name). Due to its popularity, it was also cultivated many centuries ago, mainly in China, Japan and Taiwan. The method of direct propagation is usually used, where cut shii strains are attached to an already grown mushroom and it naturally grows using spores.
Nowadays, when interest in exotic delicacies is increasing along with the desire to try foreign cuisine at home, it is no longer a problem to find almost anything fresh in most shops. However, as we know from the representatives of European meadows and groves, freshness may not be the most important thing when it comes to mushrooms. Properly dried mushrooms retain all their flavor, aroma and nutritional value and have an exceptionally long shelf-life. At the same time, we can always have them on hand, which is simply extremely practical.
And that's the case with dried and ground shiitake mushrooms. The powder is so fine that you just pour hot water over it and you can easily get a tasty and great smelling infusion, which is also good for your body. You can also add it to vegetable smoothies, where the nutty-mushroom notes will reign supreme. The consistency is also perfect for soups, sauces or steaks.
