Origins
A region of mighty rivers, mountains, and gardens that produce teas that boldly rank among the most interesting and highest quality in all of China. As the name suggests, all the teas named Pu Erh originate from the region around here. Those grown outside Yunnan are not allowed to use this designation, even though they come from the same variety of tea tree and are produced using the same methods.
The only tea used for Pu Erh is the Camellia sinesis var. assamica tea tree, which grows in the tropical zone around the Lancang River. These are ancient trees that are given special care by their growers. When hand-harvested, the youngest leaves, full of vigor and flavor, are picked and left to wilt and soften. At this stage, it is actually still the Mao Cha green tea that is the basis for Pu Erh.
Then comes the controlled stopping of oxidation. In earlier times, the leaves were dried in the sun, but due to the changing of weather, they gradually switched to pans. The heated petals must not be completely dried, as they may break during the subsequent shaping and pressing. The shapes can vary, for example Pu Erh Green Tuo Cha is formed into small bowls that resemble a bird's nest.
The classic Pu Erh in the black (Shou) variant is then processed further, but for the green (Sheng) one it is already time to dry and mature. This allows the flavors and aromas to harmonize and loosen and plays a significant role in the overall quality of the tea, together with the environment in which it is stored. Aged and stored properly, Sheng Pu Erh is sought after by connoisseurs and collectors alike, and some pieces can cost multiple fortunes.
In the past, this tea was exclusively for members of the imperial family, and each tea master carefully guarded their production secrets. And this is still the case today, which is why the taste differences can be considerable. Instructions for preparation
Pour 150-200ml of boiled water (90°C) per half a nest.
When brewing in a teapot add an extra half.
Covered, let steep for 2 minutes, then remove the strainer.
