Japan Gyokuro Shincha Kiwami is rare for several reasons. It is quite unusual for fully shaded teas to be grown organically at the same time. This is because parasites, to which tea plants are very susceptible, thrive in the shade. Therefore, the care of such shaded trees requires a tremendous amount of experience and skill. In this case, the leaves are fully protected from the sun's rays for a full 18 days, giving them a beautifully rich dark green color.
As the name shincha (loosely translated as first tea) suggests, these are the first leaves harvested of the year. The harvest is associated with the celebration of the end of Hachiju-Hachiya, the 88-night period after the first day of spring according to the Japanese lunar calendar. For tea producers, this is a special moment that is accompanied by a tea festival, meditations and ceremonies. Leaves that are harvested on the day of the culmination of this period are considered particularly valuable.
After harvesting, the tea is steamed for a very short time and rolled into thin, glossy needles. Because shading is very difficult for tea trees in organic cultivation, this tea is produced only once a year. This is also why it is called kiwami, which means ultimate, absolutely perfect. Instructions for preparation
First infusion:
Pour 100ml of boiled water (60°C) per 3g of tea.
Covered, steep for 2 minues, then remove the strainer.
Second infusion:
Pour required amount of boiled water (70°C) over tea leaves.
Steep for 1.5 minutes.
Third infusion:
Pour required amount of boiled water (80°C) over tea leaves.
Steep for 1 minute.
