Thousands of books have been written about China and tea. Leaves of all shapes, scents and flavors have been associated with the culture and life of the people of China probably since the reign of Emperor Chen-Nung (2737BC). Today, China produces perhaps as many as 8,000 varieties of tea and tea gardens cover a large part of its land area. Here, we used tea from Yunnan. The southwestern province with high mountains and breathtaking valleys exports a tea that's pleasantly fresh and harmonious, just like the local climate.
Although black teas have only been produced in Yunnan since the 20th century, they are in high demand globally. They contain a large number of young buds (tips), which give them their delicacy, and are grown, harvested and processed with attentive care. Ceylon has its place on the tea charts, too. The island in Southeast Asia concentrates on exporting black teas, which are rightly considered the best in the world. Ceylon teas are still a part of the English royal court, but they are also popular elsewhere throughout Europe, Japan, Taiwan and the United States. The growing, harvesting and processing of teas are a major part of Sri Lanka – so much so that experts are sure that halting them would be an economic and humanitarian disaster.
Genuine black teas from Ceylon, bearing the logo of a lion with a sword, have become the victim of a variety of counterfeiters. They are being blended into famous breakfast blends, afternoon tea and the popular Earl Grey.

Instructions for preparation
Pour 150-200ml of boiled water (100°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 2-3 minutes, then remove the strainer.
