Everybody knows the South American mate. It emerged from the depths of the Amazon jungle as a cultural and historical staple. While it used to be a drink exclusive to the people of Argentina, Uruguay, Paraguay and South Brazil, nowadays it’s popular all around the world and mostly here in Europe.
Drinking tea from yerba mate – scientifically known as ilex paraguariensis – is a great addition to the routine of any athlete, worker or relax-lover. It contains caffeine, theobromine and theophylline: in other words, it’s similar to coffee, other teas, or chocolate. Mate is also rich in antioxidants, vitamins and minerals.
Yerba mate is harvested either by hand or by machine, usually twice a year. Small branches of these perennial trees need to be dried first, then cut and fermented to achieve their signature taste and aroma. They’re best served in a special mate cup known as kalabaza, or a mate gourd– as the name suggests, it’s made from a hollowed-out gourd. The drink is traditionally drank through a bombilla – a metal straw with a strainer on one end.
Branches and leaves of a certain red bush by the name of Aspalathus linearis are processed in a similar way to yerba mate – resulting in the popular, honey-sweet rooibos tea.
These shrubs grow in the mountainous areas of South Africa in the Cederberg region near Cape Town. This makes South Africa the biggest and basically the only producer of rooibos in the world, since the plant requires a set of very particular conditions to grow, which aren’t easily replicable.

Instructions for preparation
- Pour 150-200ml of boiling water (100°C) per 1 teaspoon of tea.
- When brewing in a teapot add 1 extra teaspoon.
- Covered, let steep for 5 minutes, then remove the strainer.
