Darjeeling Castleton is typical for its smaller leaves of dark brown to light green color. The infusion is golden yellow, and the taste is delightful, smooth and aromatic. It may resemble peaches scented in spice.
Origins
Castleton is the name for nothing other than a beautiful tea garden located in the misty district of Kurseong. It can be found in Darjeeling, and has been there since 1885! The tea trees were planted by an English businessman when he imported most of them from China. They grow on 300 hectares of land and are tended by up to 665 employees.
The teas of Castleton are considered orthodox, picked entirely by hand, and the exact production processes are a closely guarded secret. Incidentally, Castleton was the first tea garden to be awarded ISO 9000 certification in September 1994.
Chinese tea plants (Camellia sinensis) thrive on the slopes of the Himalayas. According to the marketing director, this is due to the natural environment, which has a major influence on the final product. "Castleton is unique because of its location, soil quality and the tea trees themselves," says Binog Gurung.
The FTGFOP1 Second Flush Darjeeling is harvested in June and July. This one comes from the second harvest, with more aromatic and stronger flavor profiles. After plucking, they are left to wilt and ferment. Under the very close supervision of the plantation manager, who monitors temperature, humidity and the length of natural oxidation of the enzymes, the green tea gradually turns dark brown. Then they are dried using hot air technology. The final steps are then sorting and packaging the final product.
Most of the teas from Castleton's garden are sold only at auctions. Only a portion of production goes to the market in Japan, Germany or the UK.

Instructions for preparation
Pour 150-200ml of boiled water (100°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 3-5 minutes, then remove the strainer.
