Origins
Yunnan is a southwestern Chinese province located on the border with Vietnam. It is famous for its excellent green teas and has been producing superior varieties of black tea since the mid-20th century. It is rich in natural resources, and its nature is the most diverse in China. The altitude can vary, Yunnan has both deep valleys and high mountains. The climate is pleasant, influenced by the Pacific and Indian Oceans. Although the growing season in the province is long, the rugged terrain gives only little arable land.
Therefore, even tea gardens make use of every inch. The harvesting of shoots and the finest first leaves is mostly still done by hand. Large farms use machines, but Chinese farmers trust the traditional method. When the leaves are plucked by women, they are left to wilt and then rolled. This damages the cellular structures and releases the juice for natural enzyme oxidation. This process fundamentally changes the aroma and flavor of the tea. The green leaves become dark brown and very aromatic. The whole process is strictly monitored. High humidity and temperature are needed to ensure its quality. Drying is either by warm air or in large pans.

Instructions for preparation
Pour 150-200ml of boiled water (100°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 3-5 minutes, then remove the strainer.
