Body in Balance gives a light yellow infusion that has a mild, herbal and slightly peppery scent. Its taste is similarly pleasant, dominated by the natural herbs and a certain lean earthiness of yerba mate, complemented by the freshness of both mint and juniper. Overall, the tea feels fresh, leaving a balanced impression on the palate.
Origins
Paraná, the region from which the yerba mate in this blend comes, is one of Brazil's 26 regions. Located in the south of the country, it is crossed by the Tropic of Capricorn and partially covered by one of the world's most substantial subtropical forests.
It is here that the Paraguayan holly tree (Ilex paraguariensis) grows. Its leaves and twigs contain high amounts of the stimulants theobromine, theophylline and caffeine. Thanks to these, they have made a mark on the culture of the Brazilian natives, who used them to make a drink to overcome fatigue. Today, the leaves and twigs of these hollies are harvested every 3-4 years in plantations. Workers stuff them whole into sacks and leave them to ferment. To complete the natural process, the plant material needs to be exposed to high temperatures. The raw material is then dried and placed back into the sacks, where it matures for 1-2 years. Only then can yerba mate be ground, sorted and packaged.
We'll add a brief note about the juniper berries, which you'll find in the blend. This is a less common ingredient, you may know it as part of the popular alcoholic drink gin. Juniperus communis is usually found as a low shrub with fragrant, dark green needles. The plant comes in many varieties and can thus be found in the northern hemisphere, in places with sunshine, at the edges of forests or on bare rock or mountain slopes. Juniper berries are an important medicinal plant and are also used as a spice. They taste almost bitter and smell of resin. They maintain a normal urinary tract function and aid digestion. Traditional folk healers recommended chewing a juniper ball after a hearty lunch.

Instructions for preparation
Add 1-2 teaspoons of mate per 200ml of boiled water (70-80°C).
Steep for 3-5 minutes. Longer times equal stronger brew. Do not steep longer than 5 minutes to avoid bitter flavor.
Yerba maté can be steeped repeatedly.
