The infusion has a clear, slightly yellowish color resembling ivory. It is so light and mild that we recommend a longer steeping time than is usual with white teas to fully develop its sweetness, slight floral notes and a soft honeysuckle aroma in its full glory. The taste is soft and bittersweet.
Origins
This unique premium tea can also be found on the market under the names Bai Hao Yinzhen, Yin Zhen or White Downy Silver Needles. It is an exceptionally exquisite white tea, often referred to as "the whitest of all whites". Its uniqueness lies in the harvesting of only young, silvery shoots, which stand out for their fragility and high aromatics content. They usually measure around 3cm in length and, after careful processing, resemble long white needles.
Silver Needle is primarily produced in the southeastern Chinese province of Fujian. The rare white teas used to be reserved for the imperial court and even today are not widely available. However, Bai Hao Yin Zhen was not tasted even by the emperor's sweet tooth. In fact, it was first produced in the late 18th century in response to the cheap production of white teas from India and Indonesia. Chinese farmers bet on an exceptionally high quality, and they did well.
Today we can also find Silver Needle imitations from Sri Lanka, India or Nepal. In China, Anhui province also produces Silver Needle (sold as Imperial Yin Zhen). Women and girls go to the tea gardens to pick the buds for Silver Needle only two days a year. They wait patiently until the March weather allows them to hand-pick the finest shoots. The harvest can only take place when the sun dries the tea plants, then the bnts, uds are left to wilt and slowly dried either outdoors or in special rooms with a stable temperature.

Instructions for preparation
Pour 150-200ml of boiled water (70-80°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 3-5 minutes, then remove the strainer.
