Origins
Chinese teas are a truly complex topic – every province has its own unique harvest. For example, Zhejiang, on the east coast of China, has been making tea history since the Tang Dynasty (618-907AD). It’s home to some of the oldest and most famous tea plantations in China. The region has ideal conditions for growing tea plants due to its geography and climate as well as its altitude. Since tea plants grow best in areas with ample rainfall and moderate temperatures, Zhejiang is absolutely ideal for them. The mountains and hills not only provide excellent conditions for it, but also protect it from too much sunlight.
In Zhejiang, tea is processed traditionally, with an emphasis on handling and precision during every step of production. In some cases, the leaves are hand-formed into elegant spirals or other shapes, as is the case with Mist and Cloud tea.
Let's focus on Mist and Cloud green tea. It comes from the area around Shaoxing. The climate conditions there are really specific, with high altitude and frequent fogs surrounding the mountain slopes. The mists and clouds that protect the Chinese tea trees (Camellia sinensis) from the sun and allow them to grow slowly and peacefully. As a result, their leaves are rich in antioxidants, and they carry an enchanting attractiveness to the senses.
Workers harvest Mist and Cloud tea in the spring. During processing, they focus on ensuring that it’s almost entirely unoxidized and retains its fresh taste and distinctive aroma. They shape the leaves into elegant, long and thin spirals. The entire production process is delicate and precise.

Instructions for preparation
- Pour 150-200ml of water (70-80°C) per 1 teaspoon of tea.
- When brewing in a teapot, add 1 extra teaspoon.
- Covered, let steep for 3 minutes, then remove the strainer.
