Yun Ming – Green Tea
This green classic has been cultivated in Yunnan for hundreds of years. It has earned the nickname of the great-grandmother of green teas, and has also developed into a truly noble variety. This tea is almost unfermented, so it retains many valuable substances and precious sensory properties. You will recognize sweet and slightly astringent notes in the taste and notice a beautiful floral aroma.

Yun Ming green tea provides a light yellow infusion with a nice sparkle. The taste can be described as delicate, sweet and floral. The typical astringency of green teas is only very slight in this case. As for the aroma, you will recognize exotic flowers in it.
The tea is great both hot and iced. It warms and energizes in the winter and refreshes in the summer.
Origins
Yunnan Province is one of China's most celebrated tea regions. It lies on the country's south-western border, is covered with mountains and has a number of important rivers running through it. Yunnan's mild climate, rich in rainfall, is very beneficial to the Chinese tea plant (Camellia sinensis). No wonder local farmers have been cultivating them for more than 2,000 years.
Legend has it that originally only emperors were allowed to drink green tea, during the Shang and Zhou dynasties. The Ming Dynasty (who became the namesake for thihs tea) made history with innovations in Chinese tea ceremonies; the son of the Ming Emperor Zhu Yuanzhang even compiled the Tea Brewing Law. He also laid down simple methods for making tea and described the atmosphere that should accompany the ceremonies. "The environment should be natural and calm," he said, for example, or, "the state of mind should be open and focused."
We will allow ourselves one more comment on this great man. He paid considerable attention to the water from which the tea was to be prepared. "Water is the mother of tea. The fragrance of tea can only be discovered through water. Without water, there is nothing," he said.
His words are still true today. The quality, temperature and quantity of water we pour over tea leaves have a significant impact on the final characteristics of the drink. In the case of tightly rolled Yun Ming leaves, it should be remembered that the infusion can be slower than with other types of green tea. We therefore recommend experimenting a little and looking for the optimal proportions of all input parameters. We are confident that you will quickly find your ideal and fall in love with it.
As we mentioned in the introduction, Yun Ming is also famous for the fact that the green tea leaves undergo almost no fermentation during processing. Therefore, they are very light in color and retain many valuable substances.
