Origins
The South American super drink yerba mate, commonly referred to as "Green Gold", tastes like tea, and kicks like coffee, but is neither. While tea is made from the Camellia sinensis plant, yerba mate is derived from the leaves of the Ilex paraguariensis, which grows only in South America – specifically Argentina, Paraguay, Uruguay and Brazil. As with many other beverages and dishes, each country and region has its speciality when preparing and serving maté.
Yerba maté is the national drink of many South American countries and part of a long tradition of drinking together that dates back to Spanish colonization. The name comes from one of the indigenous languages of South America. 'Yerba' means 'herb' and 'mate' refers to the hollowed-out gourd in which the drink is traditionally served.
Yerba mate contains several active ingredients, the most famous of which is caffeine. Unlike coffee or energy drinks, it has a milder and more gradual effect, helping to increase physical performance, including endurance and speed. In addition, yerba mate helps flush excess water, refreshes the body and contributes to body weight control.
The second ingredient in the tea is the well-known lavender, which, like mint, rosemary, basil or sage, belongs to the Lamiaceae family. With its strong scent and distinctive blue-purple flowers, lavender embodies the French countryside and is one of the best-known plants.
Its name comes from the Latin word "lavare", meaning "to wash", which perfectly refers to the traditional use of lavender oil, as it's been used for medicinal purposes, in aromatherapy and in the spa industry since ancient times.

Instructions for preparation
Add 1-2 teaspoons of yerba maté per 200ml of boiled water (70-80°C)
Steep for 3-5 minutes. Longer times equal stronger brew. Do not steep longer than 5 minutes to avoid bitter flavor.
Optionally, flavor with lemon or maple syrup.
Yerba maté can be steeped repeatedly.
