Origins
You must be wondering where the Nilgiri region lies. With a modest area of 2,565 km2, it is one of the smaller regions. Yet, quite a lot has been written about India's Blue Mountains. Among other things, thanks to the tea grown there since 1835. And still according to established practices from the days of British colonialism.
The rolling hills of Nilgiri are part of the Western Ghat Mountain range stretching across southern India. People there grow some of the world's high-quality tea. They are aromatic, delicate and naturally sweet. Because the tea plantations are surrounded by fields of cardamom and pepper, we can often taste traces of spices in the flavor of the teas. Eucalyptus, vegetables and grains are also grown in the area. The crops are hydrated only by rain, since there are no irrigation systems. Three national parks and many sites included in the Nilgiri Biosphere Reserve testify to the richness of the local nature. Several birds are also named after the region, such as the Nilgiri pipit, Nilgiri woodpigeon, and Nilgiri blackbird.
Tea gardens are run by small farmers, with some plantations owned by processing plants. The entire tea segment is represented by the Nilgiri Planters' Association of South India. The final product is sold at regular auctions in Conoor, Coimbatore and Kochi. More than 50% of the tea goes for export, usually as the basis of portioned blends. Many tea gardens in Nilgiri are operating under the organic farming regime. Their products are popular and revered. So is this exceptional tea.
It has been manually harvested and processed with great care. After the green tea leaves are wilted, they are rolled to break their integrity, release the cell juices and trigger fermentation, which changes the tea's color, flavor and aroma. Only professionals will know that the fermentation process is complete. It is a delicate matter in which every little step plays its part (moisture content of the raw material, temperature and length of the process). Once fermentation is complete, the tea must be dried in a stream of warm air. It is necessary to follow a precise procedure and be cautious. Too hot air will burn the tea, while cool air will not dry it properly. In both cases, the harvest is destroyed. In the case of the South India Nilgiri FOP, everything turned out perfectly. Instructions for preparation
Pour 150-200ml of boiled water (100°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 3-5 minutes, then remove the strainer.
