Only a few things could beat the classic, high-quality tea from Ceylon that is so popular globally.
If we wanted to follow in its footsteps, it would take us to the plantations that cover the hills and hillocks of much of Sri Lanka. Tea trees are simply part of the island in Southeast Asia. And they have been since the mid-19th century when they replaced the mold-decimated coffee trees.
True Ceylon tea has also earned a permanent place in the English royal court. Tea plantations are farmed by entire families in Sri Lanka. They have done so for decades, passing on their knowledge and experience from generation to generation. That is why the tea is of the highest quality and global demand exceeds supply. The leaves of the Chinese tea plant (Camellia sinensis) are mostly hand-picked by workers (often female workers). The tea is then left to wilt, after which it is rolled. Disrupting the cellular structures of the leaves triggers a natural oxidation process that lasts for hours or days under close supervision. The temperature, humidity, color and aroma of the tea are monitored. Once the experts indicate that fermentation is complete and the tea has the ideal properties, it goes to the drying rooms. After, it is sorted, packaged and exported.
The second important ingredient is mango. The fruit of the mango tree, a massive evergreen tree, is popular for its unique, refreshing taste and excellent nutritional value. Mango trees grow in tropical and subtropical regions, where locals prepare a variety of dishes, drinks and snacks from them. Mangoes are a source of vitamins C and A and contain potassium and fiber. It has very little fat and sodium.

Instructions for preparation
Pour 150-200ml of boiled water (100°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 3-5 minutes, then remove the strainer.
