Origins
The origin of Lung Ching Xi Hu tea must be sought in Zhejiang province. The origin of the popular tea variety is explained by the legend of a great drought that engulfed a mountainous area near the village of Hangzhou. The poor farmers could no longer cope, so they asked a monk to go and ask for rain from the dragon that inhabited the well behind the village. The monk actually managed to persuade the dragon and secure the water. Since then, Zhejiang has been rich in rainfall and the tea that grows there is called Dragon Well.
Green tea is hand-picked, the leaves are left to wilt and then roasted in large pans. At the same time, they are pressed against the edges, so that they take on a flat shape. All this is alternated with tossing. The production of Lung Ching Xi Hu is quite demanding, lengthy and very precise.

Instructions for preparation
Pour 150-200ml of boiled water (70-80°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 2-3 minutes, then remove the strainer.
