Origins
If you have never heard of it, then start paying attention, lucuma will soon be everywhere. That is if you will be looking for healthy foods. A fruit with amazing nutritional values and a delightful taste is becoming a worldwide boom.
Lucuma is the fruit of the circa 20m Pouteria lucuma tree. It originally grew in the Andean valleys of Peru, Ecuador, and Chile. It is said that the avocado-like fruit was loved by people in the "pre-Inca" era. Trees with grey-brown bark and hairy, oval leaves produce spherical fruit 8-10cm in size. Beneath the dark green skin lies fibrous yellow-orange flesh surrounding several large brown seeds. Lucuma is also called eggfruit, as the texture of the flesh resembles an egg yolk.
Lucuma trees grow in South America at altitudes of 1,000-2,400m. They are also successfully cultivated in California's subtropical foothills or Laos and Vietnam. Europeans probably first tasted lucuma in the 1630s when they came across it during their expeditions to the Chinchasuyu region of Peru.
One tree can produce up to 500 fruits per year. These fall before they are ripe, so they need to be left for a while. Lucuma is usually made into a powder and used to flavor ice creams, smoothies, shakes, and yoghurts and is suitable for cookies, puddings, and porridge. In Chile, for example, you can taste the dessert "merengue con salsa de lacúma."
Lucuma fruit is rich in beta-carotene, vitamin B3, and minerals such as calcium, zinc, and iron and contains a large amount of protein.
