Origins
Japan Sencha Uchiyama grows at altitudes of 300–600 m, specifically in the Tenryu area in the Shizuoka Prefecture of Japan. Shizuoka produces approximately 40% of Japan's green tea. Why? The answer lies in the ideal ""Pacific"" climate: four seasons without drastic changes in temperature, perfect heat during the day, high humidity, abundant rainfall (reaching over 1,500 mm per year during the growing season), and one extra special factor – thick morning fog. All these create excellent conditions for tea plants.
Thanks to volcanic eruptions from Mount Fuji, the soil in this area is rich in minerals and well-drained, so there’s no risk of waterlogging the roots of the tea plants. The altitude, cool mountain mornings, and temperature fluctuations between day and night promote the concentration of the legendary umami. What’s more, they preserve the delicate aroma of the tea leaves.
It’s no wonder that Shizuoka is so closely associated with tea. After all, its inhabitants have been growing it since the 13th century. The area is home to families who have been processing sencha for generations but also specialize in other types of tea, such as the deeply steamed ""fukamushi"" sencha typical of the Kikugawa area.
The local tea culture is complemented by a rich culinary tradition. Take Shizuoka oden, for example, a hot dish with a deep umami base. In Shizuoka, it’s quite common to serve a cup of tea with oden, not only because tea cleanses the palate and refreshes the taste buds but also as a symbol of hospitality and sharing. Shizuoka oden is prepared from dark soy broth, in which a colorful mixture of ingredients is slowly cooked: fish cakes, daikon (Japanese radish), eggs, potatoes, tofu, or konnyaku, with each ingredient skewered on a stick and often lightly grilled to give it a smoky flavor.
Both of these traditions are expressions of the Japanese art of zen, enjoying the present moment, and bringing people together around the table.

Instructions for preparation
- Pour 150-200ml of water (70-80°C) per 1 teaspoon of tea.
- When brewing in a teapot, add 1 extra teaspoon.
- Covered, let steep for 3 minutes, then remove the strainer.
