Origins
Jade Eyes Green Tea, with its shape and strong jasmine aroma, already speaks of a complex production and a long tradition. The scented teas originated in China. Jasmine, lotus, hibiscus, chrysanthemum or orange trees are most often used to flavor the tea leaves, which absorb the aroma very well. The most popular and natural practice involves mixing partially processed green tea with buds of aromatic plants. When left in a heated room for several hours (overnight for jasmine), the flowers will unfurl and impart their fragrance to the tea. This method is now only used in China, where the aromatic teas are considered to be among the finest. The other option is to flavor with natural or synthetic essences. It is typically used, for example, in Earl Grey. Indian teas are often flavored by adding spices.
Fujian Province is world famous for its green tea production. Although most of its surface is covered by mountains, frequent rainfall and high humidity are very beneficial to Chinese tea plants. The tea gardens are situated on hillsides, often in terrain that is difficult to access. The green tea is harvested early in the morning by women and girls. The tea leaves and buds, which are very rich in Jade Eyes Green, are left to wilt after being transported to the processing farms. To stop the natural oxidation of the enzymes, the tea is heated with dry heat. It is then carefully hand-formed into the shape of "dragon eyes" and dried.
