China White Hair gives a light yellow infusion with a really mild, sweet smell. The flavor can be described as mild, slightly honeyed, fresh and floral in the finish.
Origins
Any moderately knowledgeable tea lover knows the story of China and tea. They've been enjoying the benefits of tea leaves there for over 5,000 years, so it's a safe bet to say they know a thing or two about harvesting and processing them. Similarly, the owners of all tea gardens have years of experience growing Chinese tea plants (Camellia sinensis) backed by generations of family tradition.
The most typical product of Chinese plantations is green tea. They are usually harvested twice a year, exclusively by hand in the case of fine and special varieties. After plucking, the leaves are allowed to wilt, then the natural oxidation of the enzymes is stopped by steaming or roasting, and finally the tea is shaped. In the case of China White Hair, it's into long needles. The final step in the production of this tea is drying. As with the previous stages, the entire harvest can be irreversibly damaged. Too moist tea quickly molds, over-dried tea tastes burnt and therefore lacks the typically delicate flavor and aroma. The entire production process is therefore overseen by an experienced manager.
