Rooibos is the fermented leaves and twigs of the Cape tea plant. You may not have heard of them yet, but that wouldn't be surprising. After all, they are shrubs that grow in a very small area of the nearby Cape Town, South Africa. They're extremely sensitive to industrial pollution in the water, air and soil and require specific humidity, altitude and soil conditions. That's why cape tea plants can't be grown anywhere else. But in the world of healthy lifestyle enthusiasts, rooibos is one of the most popular. It tastes absolutely wonderful, it's caffeine-free, and it also contains antioxidants and a number of important minerals.
Strawberry leaves are more familiar to Europeans. They are harvested in spring, when they contain the highest amounts of beneficial nutrients. A tea made from wild strawberries can be used to battle inflammation or indigestion.

Instructions for preparation
Pour 150-200ml of boiled water (100°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 8 minutes, then remove the strainer.
