Origins
Each ingredient in this tea deserves a special description. But if we are going to highlight one, it has to be the rooibos. Not only because it sets the flavor line for the blend and also provides the tea with a large number of valuable substances, but also because it is botanically very interesting.
You will find it under the name ''red tea'', but botanically it is called Cape tea (Aspalathus linearis). You can think of it as a shrub with long twigs covered with thin, needle-like leaves. It is found exclusively in the Cederberg, one of the provinces of South Africa. Teasels require sandy soil and a warm climate. They flower yellow, only once a year. Their superpower is their resistance to fire, which is quite common in the Cederberg. It can survive in the soil for up to 6 years, and the shrubs do not mind periodic fires either – they quickly put out new branches as soon as circumstances allow.
If you wanted to cultivate tea plants, you probably would not be able to. They require specific conditions, and even in their home country, cutting or growing from seed is difficult. In any case, if you manage to plant a tea plant, it takes up to 18 months to harvest its leaves and twigs. Farmers make rooibos from them by chopping them, letting them ferment for 8-24 hours and then harvesting them in direct sunlight. This gives the herb a beautiful mahogany color and honey flavor with a nutty aftertaste.
Rooibos is rich in beneficial substances, including antioxidants and a range of minerals – from iron to calcium and potassium to zinc and magnesium. It is therefore popular with people of all ages and is often used as a base for exceptionally tasty tea blends.
