We combined the spicy, aromatic tinge of ginger with the decadent bittersweetness of chocolate. Ginger makes this tea beautifully zesty, and it’s balanced with the sweet tones of dates and the deep flavor of chocolate, slowly unveiling a pleasant undertone of lemongrass. The brew is of light color with slight, almost honey-gold tinge.
Origins
Lemongrass comes from Southeast Asia, but eventually wound up being used all over the world. It’s a tall plant, reminiscent of a spring onion plant with a lemony scent. It’s also popular in ayurvedic medicine and has a wide range of uses across gastronomy and the beauty industry. Brewing dried stems of this plant results in a pleasant beverage, no sugar or honey needed.
Dates are one of the oldest fruits on Earth. Their cultivation began more than 7000 years ago around the area of today’s Pakistan and Iraq, however most of modern dates are grown in Morocco, Tunis, Spain and Egypt. This fruit of Phoenix Dactylifera, the mother plant, can grow up to 7cm and usually has a red or dark brown color. Their taste is sweet and almost caramel-like. Dried dates also maintain this aroma and sweetness and you can actually find them in most supermarkets. It’s a great snack as it is, but you can combine it with most foods and drinks for a little extra something as they don’t require any recommended dosages.
Hot cocoa doesn’t have to be a kids-only drink. Actually, it used to be a sacred beverage and an offering to gods – and what’s more, it’s plenty good for you! It’s full of minerals such as calcium, magnesium or iron. The mother plant, an evergreen tree that can reach up to 8m, grows cocoa beans that can be as big as 30cm. While its origins are said to be somewhere in the Amazon jungle, nowadays it’s mostly produced in West Africa. Cocoa is traditionally used in desserts, but its uses are varied – try it in a smoothie!

Instructions for preparation
Pour 150-200ml of boiled water (100°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 8-10 minutes, then remove the strainer.
