Oolong China Se Chun gives an infusion of yellow-green color and a pleasant, floral aroma. The taste is delicate, mild, similar to fine green teas. It leaves a sweetish aftertaste on the palate.
Origins
Traditional Chinese teas are made using a unique process that hasn't changed for centuries. It makes local oolongs unmistakable and, although they often 'rival' Taiwanese oolongs, tea veterans can easily tell them apart.
After a short wilting of the leaves of Chinese tea trees (Camellia sinensis), which takes place exclusively in the sun, the tea is slightly bruised. Farmers toss it in bamboo baskets. This is repeated several times in succession, always with a 1-2 hour break. In this way they can control and manage the fermentation. By the aroma the leaves give off, they can judge whether or not the enzyme oxidation is sufficient.
This process is finished by the rapid and brief heating of the leaves. This is followed by cooling, rolling or granulating and drying. Either in a drying oven or in bamboo baskets.
Oolongs are divided into four categories according to the degree of fermentation: fermented between 50-70%, around 40%, above 20% and below 20%. China Se Chung Oolong is classified in the last category. This makes it stand out with its rare floral aroma.
It can also be found on the market under the name Se Zhong. It is harvested and processed in the traditional tea province of Fujian on the south-east coast of China.

Instructions for preparation
Pour 150-200ml of boiled water (80-90°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 5 minutes, then remove the strainer.
