Origins
Do you know Hubei province? If not, imagine a landscape where the lowlands alternate with large cities and the hills are shrouded in mist for most of the year. It is here that Chinese tea trees (Camellia sinensis) are grown, far from the busy roads and large factories. Hubei is located in the central part of China, in the neighbourhood of other provinces famous for tea such as Fujian and Yunnan. It lies in the subtropical zone, which corresponds to the seasons – in winter, temperatures hover around zero and slightly above, in summer they stay between 24-30°C. Typical of Hubei is the frequent rainfall, which means that most of the hills are often literally drowned in fog. For tourists with a camera, this may be a shame. For tea garden owners, however, it's a big win. It's the humidity and limited sunlight that help the tea leaves produce more chlorophyll and keep them both tender and fragile.
Tea plants are often harvested manually by workers. For China Milk Mao Feng tea, they selected distinctively fluffy leaves and buds, which are among the rarest things to be found on tea plantations. Because green tea loses its aroma and flavor quickly during fermentation, it is necessary to transport the leaves for processing as fast as possible. In the factories, the workers spread them on screens and leave them to wilt for a short time. The natural oxidation is then stopped by rapid heating, the tea is rolled up and well dried. Each step is very important, any mistake or omission will lead to the depreciation of the whole batch. Let us add that China Milk Mao Feng is only whole leaves, so after you cover them with hot water, they will beautifully unfurl.
This green tea has been imbued with milk essential oil. Lactose-intolerant people should exercise caution.
