China Anji Bai Cha Mao Feng tea has a beautiful yellow color. The taste can be described as sweet, delicate, with floral notes. It is very harmonious, leaving a pleasant, long-lasting impression on the palate. This tea is great for cold brew, a long steeping in cold water.
Origins
China's Zhejiang province is renowned worldwide for its high-quality green tea. Located on the eastern coast of the country, it has a very long tradition of growing Chinese tea plants (Camellia sinensis). Tea plantations are often tended by generations of farmers. No wonder they export China's most famous teas, which are in demand among true connoisseurs. The tea we are about to present combines two varieties – the fresh Bai Cha and the delicate Mao Feng. Both come from the Anji region, located in the north of Zhejiang province.
A healthy environment and care for nature is essential to the people of Anji, so they gravitate towards eco-friendly farming, using local natural conditions to produce crops in a way that doesn't pollute the surrounding area. "Although our region is mountainous, we receive a large number of visitors every day. The mountains, waters and clean air of Anji are now valuable commodities," says, for example, Qian Kunfang, a local district judge. Agricultural products grown entirely naturally now account for 40% of the market, but the ambition is much higher. Moreover, organic farming is attracting investors to Anji, and the local government is strict enough not to allow any projects with a negative impact on the environment. In addition to tea trees, Anji also grows bamboo, vegetables and flowers.
But back to tea. Bai Cha is characterized by its long, needle-like leaves. Its name may give the impression that it is a white tea, but "Bai Cha" in this case refers to the fact that it is made from the first shoots of tea trees with very light leaves. These are plucked by workers in late March or early April. Mao Feng is more curly and is made from the first three leaves harvested later than Bai Cha. The taste of the former is refreshing, while the latter has floral undertones and sweetness.
The two green teas complement each other wonderfully, so you can enjoy a truly harmonious drink with a lovely aftertaste.

Instructions for preparation
Pour 150-200ml of boiled water (70-80°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 2-3 minutes, then remove the strainer.
