St Benedict's Thistle (Cnicus Benedictus L.) – Herb
Nomen omen often applies not only with humans, but with herbs, too. Benedictus translates as blessed, so we can be sure this thistle is truly extraordinary. It supports the normal function of the digestive and respiratory tract. But just like with any other herb, remember to consume responsibly.

It is variously called centaury, starthistle, knapweed, basketflower or St Benedict's thistle. The last name is associated with the legend of Charlemagne. His army was threatened with plague during their battles. The emperor was about to give up the battle and retreat when an angel appeared to him and advised him to shoot an arrow. Where the arrow lands, he said, he would find a treasure that would protect his soldiers. And you guessed right, it was a thistle.
The herb can grow up to 60cm. It has distinctive leaves and a tasselled yellow flower. It is native to the area around the Mediterranean, where it prefers drier but good quality soil. Its inflorescence is harvested at the time of full bloom to ensure that it is rich in health benefits. It is then slowly dried at low temperatures of around 30°C.
St Benedict's thistle is an edible herb. In Scotland, they even used to put a leaf of the plant between two buttered slices of bread as a nutritious and quite tasty snack. Most often, however, the stems are used to make an infusion. This can simply be drunk or used for poultices and baths.
Tea from this herb can be consumed in reasonable quantities for 6-8 weeks, after which we advise a break. However, it is not recommended for pregnant women or people taking medication to reduce stomach acidity.

Instructions for preparation
Pour 250ml of boiled water (100°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 15 minutes, then remove the strainer.
