Origins
Oolongs are teas characterized by a very round and fresh taste. This is achieved via semi-fermentation, so it can be classified somewhere between green and black teas. Oolong is originally a Chinese tea, but Taiwanese production is also very successful.
Chinese tea trees (Camellia sinensis) are grown in Taiwan in several regions: northern, central, eastern and southern. Tea gardens are located in the high mountains and at the foot of the local hills. The leaves are harvested at full maturity and up to 5 times a year. The tea harvest in Taiwan takes place from April to December. Somewhat uncharacteristically, the leaves are left to wither in direct sunlight, then transferred to bamboo baskets which are shaken vigorously. This breaks the edges of the leaves and starts oxidation. They can also be tightly rolled or loosely bent. Then comes the air drying.
Oolong Smooth was brought in from Nantou, an inland region of Taiwan. The average summer temperature is around 15-24°C and the climate is reasonably humid. In all the 12 local villages, farmers are engaged in unique tea cultivation. Perhaps the most famous of the tea gardens is Iugu Township, where tea trees brought from Fujian, China, were planted for the first time.

Instructions for preparation
Pour 150-200ml of boiled water (80-90°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 5 minutes, then remove the strainer.
