Seventh Heaven – Rooibos

The overall flavor of this tea is built on rooibos and honeybush. Chocolate and smooth caramel are right behind them, with a trace of coconut on the palate at the end. The infusion is a luxusious mahogany, with every single ingredient having its part in the aroma. Their interplay is balanced and gives a wonderfully smooth and honeyed beverage. Both rooibos and honeybush are naturally caffeine-free, so this tea is great for children, pregnant and nursing women, and those in recovery. We encourage you to try Seventh Heaven as an iced tea as well. It is extremely refreshing!
Origins
Rooibos and honeybush are both harvested from very limited areas in South Africa. Each has found their ideal conditions in a different location – rooibos in the Cederberg Mountains, about 250km from Cape Town, honeybush around the Southern and Eastern Cape. Both are strict endemics and have cannot be cultivated anywhere else in the world. This is because they require very specific conditions, such as altitude, humidity, soil composition and so on. Rooibos is harvested in the autumn from the Cape tea plant. Its whole twigs and needle-like leaves are cut, then chopped, fermented, dried directly in the sun and sorted. Processed in this way, rooibos has a mahogany color and a sweet, nutty flavor.
Honeybush comes from the Cyclopia shrub, which grows wild high in the mountains. Its harvesting is quite labor intensive – it is done by hand so that during the flowering season the plants are cut just above the ground and transported in large baskets to cutting machines. The small pieces are then soaked and left to ferment in ovens. When this process is complete, they have a dark brown colour and a honey aroma. Finally, the honeybush is dried in direct sunlight.

Instructions for preparation
Pour 150-200ml of boiled water (100°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 8 minutes, then remove the strainer.
