Sencha Peach – Green Tea

After brewing, you'll get a light green tea with a subtle golden hue. Sencha adds a refreshing grassy note as well as umami, the latter making it stand out among other green teas. Peach brings a fruity sweetness while apples and carrots along with mallow flowers give a perfect finish.
Tip: In the summer, make Sencha Peach as an iced tea. Brew it with hot water, let it cool, and add some ice as well as fresh peach slices. It's done in five minutes and empty in two.
Origins
The main ingredient of this tea is sencha, one of the most popular green teas in the world. We've opted for Chinese sencha in this blend. It's just as wonderful as its Japanese counterpart, but with a slightly less ""sea"" flavor, making it a favorite even among those who are just getting started with tea.
It differs from other green teas in its processing method. Immediately after harvesting, the leaves are steamed, which stops oxidation and preserves their rich green color and distinctive grassy flavor with notes of umami. It helps protect cells from oxidative stress, supports normal cholesterol levels, and promotes healthy cardiovascular function.
People also drink sencha when they need to focus, since green tea supports concentration and cognitive function. Research also attributes sencha a beneficial effect on gut microbiota and the digestive tract.
Peaches are one of the oldest cultivated fruits in the world. Originating from China, they've been a symbol of longevity and immortality for centuries. Peaches appeared in Europe much later, likely via Persia, from which the Latin name also derives. Today, they're among the most popular summer fruits and are grown in many warmer regions around the world.
Blackberry leaves come from a plant that people have been using for millennia, even though the thorny branches don't really give up its good intentions. Already in ancient Greece and Rome, the blackberry plant was a valued resource. Christian symbolism, however, tarnished its reputation, as its thorns were too reminiscent of Christ’s crown of thorns, and the shrub suddenly fell out of favor.
Fortunately, its beneficial properties ultimately prevailed, and the blackberry bush retained its good reputation. Blackberry leaves are associated with healthy digestion, fluid elimination, menstrual comfort, and relief during menopause.
The delicate, soft flowers of the mallow contain mucilage that has a soothing effect on the mucous membranes, which is why people instinctively turn to it when they have a sore throat or issues with the respiratory tract. It also helps promote normal digestion and healthy bowel function.

Instructions for preparation
- Pour 150-200 ml of boiled water (70-80°C) per 1 teaspoon of tea.
- When brewing in a teapot, add 1 extra teaspoon.
- Covered, steep for 2-3 minutes, then remove the strainer.
