Origins
The base of this loose.leaf treasure is sencha, a tea found in just about every household in Japan. It is harvested in many places in Japan and experienced tea masters can tell where the sencha was grown by the taste. Its sensory qualities are determined by altitude, climatic conditions, soil composition, light conditions and the way it is harvested and processed. We brought sencha from the Shizuoka region, which is famous for its traditional tea gardens and several centuries of experience in tea cultivation. The harvesting of Chinese tea plants (Camellia sinensis) takes place early in the morning. It is usually the prerogative of the local women who use their nimble fingers to pluck the youngest 2-3 leaves. They contain the most caffeine and antioxidants, for which green tea is so highly valued.
After wilting, the tea leaves are subjected to a short but intense steaming. This is a 10-30 second process that is repeated several times and stops oxidation to allow the tea to retain its beautiful emerald color and up to 90% of all important substances. The leaves are then needle rolled, dried and sorted.
The strawberries and lingonberries in this tea have also been sourced carefully. We bring them from certified EU suppliers who pride themselves on the highest quality. Large pieces of fruit, mostly from organic farming, are processed by gentle freeze-drying (vacuum freezing). After brewing, the tea contains fruit that looks, smells and tastes just like fresh.
