The grassy, natural aroma will envelop you as soon as you open the bag. After you add the spirals in to teapot that's preferably glass and pour hot water over them, the aroma will develop into a floral scent laced with fruit. The taste is sweet and light with hints of peaches, plums and apricots. Pi Lo Chun is only lightly bitter, but when you focus on the flavor, you'll be able to appreciate the slight astringency. It adds freshness to the tea and makes you want to take another sip.
Origins
The ideal conditions are found at Pi Lo Chun in the Dongting Mountains of China's Jiangsu Province. Thanks to the nearby Tai-hu Lake, the area is characterized by high humidity, which suits the Chinese tea plants (Camellia sinensis) very well. The tea gardens are carefully planned and treated with utmost care. Tea leaves are known to absorb ambient scents very well, which is also why people harvesting tea are not allowed to wear perfume or smoke, and this is especially true for Pi Lo Chun. They plant fruit trees such as peach, plum and apricot among the tea bushes, so the tea plants can absorb their aroma.
The harvest is also quite unique. There can only be one day a year when the leaves reach their maximum quality. This usually happens between mid-March and mid-April, always around the spring equinox. Hand-picking must be both careful and gentle – only the 3cm long tips of the leaves, which are the most aromatic, are harvested. On the same day, they are hand-rolled into a shape resembling a snail's shell. Then they are dried and sorted.
Over 14,000 tea shoots are needed for 1kg of tea. Pi Lo Chun is also produced in Zhejiang and Sichuan provinces, but the one from the Dongting mountains is considered the best. It is also found on the market under the names Bi Lou Hong Cha Green, Green Snail Spring, Xia Sha Ren Xiang, Bilouchun or Pi-luo chun.

Instructions for preparation
Pour 150-200ml of boiled water (70-80°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 2-3 minutes, then remove the strainer.
