Origins
The word Formosa indicates that it is a high-quality tea "from the beautiful island." Semi-fermented Taiwanese oolong is truly one of the top in its category. Chinese tea plants (Camellia sinensis) were brought to the country from China. The oldest tea plantations in Taiwan date back to the 19th century. Today, the island is the seventh largest tea producer in the world, producing 20,000 tonnes a year. Its great specialty is the semi-fermented or blue-green oolong tea.
The Nantou region, which is situated in a hilly landscape, is characterized by the cultivation of two unique oolongs: Fancy and Finest. Both are the result of many years of cross-breeding tea bushes, patiently carried out by local farmers over three generations. The result is a real treat. We bring you Fancy with a wider range of flavors, a relatively high nuttiness and a delicious sweetness. This very light tea can be sipped at any time of the day.
The tea leaves for making Oolong Formosa Fancy are harvested up to 6 times a year. It must be processed immediately after plucking. After being transported to the farm, they are left to wilt in a large room at a temperature of 25-28°C. This releases a certain amount of water and changes the aroma of the leaves. After the leaf has wilted, it is shaken by machine to break down the cellular structure and start the fermentation process. These usually take 3 hours and by the time the desired degree of fermentation is reached, the high temperature has destroyed the enzymes that make it possible. Taiwanese oolongs are heated in large pans. The tea is then rolled, dried and shaped.
