Origins
Kumamoto Prefecture is located in the heart of Kyushu Island. You would be hard pressed to find the Soyo area on a map these days; in the 1980s, it and other smaller villages merged to form the newly formed town of Yamato. But the tradition of tea growing has remained. And no wonder, since it has the perfect conditions there.
The Aso volcano, the largest in all of Japan, has given the land an immense mineral wealth. Frequent temperature changes, fog and the crystal clear source of the Kikuchi River, along with the fertile soil, are the reasons why it is possible to get such intense, premium-quality sencha without any added chemical intervention.
The tea gardens where this sencha grows cover an impressive 179 hectares at an altitude of 300-500m. Harvesting takes place right at the beginning of spring, which results in an intense freshness in taste and aroma. The tea is traditionally processed by steaming, and the resulting shape resembles tiny needles.
Japanese tea masters place emphasis on the so-called "golden drop". Instructions for preparation
Pour 150-200ml of boiled water (70°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 2-3 minutes, then remove the strainer.
