Origins
Fujian is a province on the southeast coast of China. Most of Fujian is mountainous, traditionally referred to as "Eight parts mountain, one part water and one part land". The coastal area is characterized by numerous bays. Fujian has a subtropical climate with mild winters. On the coast, January temperatures are around 7-10°C, while in the mountains they are 6-8°C. Summer temperatures are high and the weather is often affected by typhoons from the Pacific. The interplay of all climatic conditions favors the cultivation of many agricultural commodities, most of all tea.
Traditional green tea production employs hundreds of people in Fujian. They tend to their plantations of Chinese tea trees (Camellia sinensis) with their entire families and pass the craft down through the generations. In the case of King Mao Feng tea, the result of their efforts is a truly unique tea. Only the fuzziest leaves and long shoots are selected for harvest. They are plucked by women and girls who head out into the hilly terrain early in the morning and store the tea in large baskets on their backs. It must be transported as quickly as possible for processing, so that it does not ferment in the heat and humidity. At the processing plants, the leaves are spread out on large screens where they naturally wilt. The high temperature then stops any oxidation of the enzymes, and the tea is rolled and dried. King Mao Feng remains whole leaf. The finished tea passes through a sorting plant, is packaged and exported.
