Origins
Southeast China's Fujian province is one of the major producers of high-end green tea. So-called scented teas have been produced by local farmers since the ancient times. Their worldwide popularity has not declined at all, high-quality jasmine teas are consistently highly rated on the markets. They are usually referred to as Mo Li (jasmine).
The production of authentic jasmine green tea is demanding and quite long. The leaves and buds of Chinese tea trees (Camellia sinensis) are harvested in early spring, from March to April. At that time, however, the jasmine trees, whose buds flavor the tea, are not yet in bloom. Therefore, the green tea is only partially processed and 'waits' in special rooms for the jasmine to bloom. This happens in the summer. The jasmine flowers are picked while still closed, mixed with the green tea in the evening and stored in a heated room. Overnight, the jasmine will unfurl and pass on its scent to the tea. Common varieties of jasmine tea are scented 3 times in succession, the most selected and expensive ones up to 8 times.
After that, the jasmine must be sorted. Usually with the help of fans, which blow the light flowers out of the green tea. The resulting jasmine tea is dried, sorted and packed.
We recommend preparing jasmine tea in a zhong.
